Etymology 1
From Middle English chese, from Old English ??ese, specifically the Anglian form ??se. This was derived from West Germanic *k?s? or late Proto-Germanic *k?sijaz, borrowed from Latin c?seus (“cheese”). Cognate with West Frisian tsiis, Low German Kees, Dutch kaas, German Käse.
West Germanic *k?s? developed into Anglo-Frisian *k?s? by Anglo-Frisian brightening. This developed the Anglian form ??se by the shift *? > ?. The early West Saxon form ??ese developed by palatal diphthongization after ? (? > ?a, yielding *??as?, and then i-mutation (?a > ?e). The later West Saxon form ??se developed through the shift ?e > ?. In both dialects, *k was palatalized to ?, and the final vowel *-? was first shortened and then reduced to -e. Anglian ??se yielded the modern form cheese.
